I am a very organized person. I am a list maker and follower. I must have a clean house or I go crazy. I hate to be late. I also live with two teenagers. This means that 3 out of 4 of these self-descriptions go out the window with them in the house!

The kids pack backpacks, get their clothes chosen and take showers before bed. While the kids get dressed, I make their favorite 10 Minute Sausage Breakfast Stack. It is easy, packed with protein and delicious.

10 Minute Sausage Breakfast Stack Recipe

 

Ingredients:

4 English muffins

4 eggs

4 Smithfield Fresh Breakfast Sausage Patties

2 cups Shredded hashbrown potatoes

4 slices American or Cheddar cheese

4 mason jar rings or egg ring molds

2 tsp. butter

Cooking spray

salt and pepper to taste

Directions:

Cook the Smithfield sausage according to package directions, until thoroughly cooked. Place on paper towel.

Heat a skillet on medium-low heat. Place your mason jar rings or egg ring molds in the center of the pan. Spray the insides with cooking spray. Melt butter in middle of each ring. Crack open egg into each ring. Stir gently with fork, but don’t mix completely. Season with salt and pepper. Cook until firm.

Repeat the egg cooking process with the hashbrowns. If you find it difficult to cook the potatoes in the ring, cook them any way you normally would.

While cooking your hash browns, toast your sliced English muffins.

Layer as follows: bottom of muffin, slice of cheese, sausage, egg, and top of muffin. Serve with fruit and enjoy!

Because I am a multitasking gal, this recipe speaks to me! I can have several things going at once. This helps get your 10 Minute Sausage Breakfast Stack done quickly and efficiently. While I am cooking the sausage, I have the hash brown potatoes going. When these are almost done, I make the eggs. Then I set up an assembly line.

This way, the kids can put together their 10 Minute Sausage Breakfast Stack. If we have time, the kids can eat at home. If we are running late, we can wrap the stacks in a napkin and put their milk in a small water bottle. These stacks are portable, so they can eat these on the way to school. We actually had these for breakfast today and saved the extras for dinner! You can also freeze them and heat them in the microwave! Easy peasy lemon squeezy!
