15 Minute Thai Peanut Pasta Recipe
With two young boys in the house who have their own food preferences, it can be hard to find a meal that we can all agree on. I have my tried and true favorites that we all enjoy, but while the kids could eat those every day, Justin and I get sick of them.
One of my workarounds is to make a meal that includes those staples, but then make different versions. For example, I might make chicken tenders and leave them plain for the kids, and then cut them up into a gourmet salad for Justin and I. One of the easiest foods to do that with? Pasta!
My kids love pasta and I love how easy it is to dress up! The boys enjoy theirs with red sauce or butter, but I try to find new ways to change up the grown-up version each time we eat it. This 15 Minute Thai Peanut Pasta was a total winner because not only was it delicious, but it was fast and easy to make! Whether your whole family likes to try new foods or you’re trying to find a way to compromise with the kids, be sure to try this pasta dish.

15 Minute Thai Peanut Pasta
Ingredients
10 oz. spaghetti
⅛ Cup chopped chive
⅛ Cup sesame seeds
½ Cup peanut butter
1 Tbsp soy sauce
⅛ Cup cornstarch
⅛ Cup milk
⅛ Cup sugar
1 Tbsp lime juice
½ Tbsp sriracha sauce
½ Tbsp salt
Directions
1. Boil water with salt in a pot over medium-high heat.
2. Add the pasta and cook as instructed on the packaging.
3. While the pasta is cooking, carefully mix in a pan over medium heat the peanut butter, soy sauce, cornstarch, sugar, lime juice, sriracha sauce, and salt. Stir and cook for 5 minutes. Add milk and cook an additional 1-2 minutes.*
*If your sauce is runny, make a slurry in a small bowl by combining 1 TBSP corn starch with 1 TBSP cold water {or milk if you want it even creamier} until well combined and paste-like. Whisk it into to the sauce, bring it to a boil and simmer for about 30 seconds.
4. Once the pasta is done, drain and place again in the pot.
5. Add the peanut sauce and mix until well combined.
6. Serve on plates and garnish with the chives and sesame seed.
7. Serve and enjoy.
Tip: Swap the soy sauce for tamari sauce and the spaghetti for zoodles for a gluten free version!
