We think it’s worth the tiny effort of making your own Cajun spice mix but feel free to use a shop-bought packet. It’s used to flavour chicken thighs, chorizo, peppers, cherry tomatoes and sweet potato in this easy traybake. Olives (black or green, it’s up to you) add a piquant note and cashews add crunch. Serve with dollops of sour cream and a green salad on the side.
