Freezing parsnips is a way to keep them at home longer. One of the best options is to remove its peel, boil for a short time and then put in cold water mixed with ice. This process is called food blanching and it’s beneficial in reducing oxidative damage by its own enzymes.

You can freeze parsnips raw without blanching them first. Clean, peel, trim, and cut them into pieces. Then transfer them to a freezer-safe bag. However, they won’t keep as long only 2 or 3 months compared to up to a year.

Parsnips can be frozen either raw or cooked. In the case of raw parsnips, wash, peel and cut as you prefer. Next place it in boiling water for two minutes, then put it in ice water for two minutes. Place it to dry properly, then pack it and take it to the freezer. If the parsnip is already cooked, package it and place it in the freezer.

Before freezing parsnips ensure they are scrubbed clean. For ease of use, chop the parsnip into the form you intend to use it in the future (for example cubes or slices). Once the parsnip is clean and chopped place in an airtight container and freeze.
