Ingredients

  • 2 1/4 cups flour
  • 2 1/2 tbsp cornstarch
  • 1 tsp kosher salt
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • 1 cup unsalted butter
  • 1 cup dark brown sugar, packed
  • ½ cup sugar
  • 2 tsp pure vanilla extract
  • 2 large eggs
  • 2 cups chopped pecans
  • 20 whole pecan pieces

Instructions

Preheat the oven to 350 degrees f.

Line two cookie sheets with parchment paper.

Place the flour, cornstarch, salt, cinnamon and baking soda into a large glass mixing bowl and whisk together.

Using a saucepan or small pot, melt the butter over medium heat, occasionally stirring until the butter is golden brown.

Remove the butter from the heat and pour it into a large heat proof bowl.

Whisk in the brown sugar and sugar until combined.

Beat in the vanilla and eggs, one at a time until combined.

Gradually beat in the flour mixture until combined.

Fold in the 2 cups of chopped pecans.

Use a medium ice cream scoop to scoop the dough onto the cookie sheets.

Place a whole pecan piece onto the top center of the dough mounds.

Put the cookie sheets into the oven and bake for 8-10 minutes or until light golden brown.

Remove the cookies from the oven and sprinkle some sugar on top.

Place the cookies onto a cooling rack and allow them to cool.

Serve and enjoy!

Keep cookies stored in an airtight container at room temperature for freshness.
