One side dish on my list holiday go-to’s that I know is guaranteed to always be a crowd-pleaser is cornbread casserole.  I have to thank my sister-in-law for introducing this to my “must bake” holiday recipes list.  Her mother made it for every Thanksgiving meal and she continued the tradition, passing it along to family and friends, too, and sure enough, you’ll find cornbread casserole at nearly every one of our tables!

Commonly referred to as spoon bread, too, I’m not entirely certain what the origin of cornbread casserole truly is, it’s one of those recipes that has been around our southern holiday tables for decades.  What I do know, is that it can sometimes be difficult to bake when I happen to have a turkey or ham in the oven.  I generally have to make it ahead of time and re-warm it or make it after and run the risk of the turkey or ham cooling off a little too much prior to serving.

This year I’m solving my dilemma by baking the cornbread casserole in the Black & Decker Extra Wide Toaster Oven:

A test run of the casserole produced a lovely moist dish with a lovely browned crust.  I’m totally thrilled to have the extra help in our Rural Kitchen this year to help me get dinner on the table with perfect timing!

Cornbread Casserole Toaster Oven Recipe

Ingredients

  • 1 package (8.5 ounce) of Corn Muffin Mix (I use Jiffy)
  • 1 can (8-9 oz.) whole kernel corn
  • 1 can (8-9 oz.) cream style corn
  • 1 C sour cream
  • 1/2 C butter
  • 2 eggs

Instructions

  1. Preheat toaster oven to to 375°F (per manufacturer’s directions.)
  2. Melt butter, set aside. Drain whole kernel corn, set aside. In a small bowl, beat eggs, set aside.
  3. In a large mixing bowl, add butter, whole kernel corn and cream style corn. Mix until fully blended. Add sour cream. Mix until fully blended. Add eggs. Mix until fully blended. Add muffin mix. Mix until all ingredients are fully blended.
  4. Pour cornbread casserole mixture into a lightly greased 9 x 13 casserole dish.
  5. Bake for 30 to 35 minutes or until upper crust is lightly browned and center is firm. Remove dish from toaster oven and allow to cool for ten minutes prior to serving.

I love discovering innovative ways to help make holiday cooking a little easier.  Less time in the kitchen means more time with my guests enjoying the great foods and fun festivities!

The Black & Decker Extra Wide Toaster Oven will be a huge help to me during the holidays, but I know we’ll get plenty of use from it all year round.  It’s a great energy saver as we can easily warm up foods without having to heat up our regular oven and I love that I can now toast things like muffins that just don’t fit well in our regular toaster.  This appliance definitely made our top gift for the holidays selection for its versatility and overall excellence in performance!
