Easy & Authentic Korean Bibimbap

Ingredients

Serves two 

  • 1 1/4 cups white rice
  • 1 1/2 cups water
  • 8 oz ground beef
  • 1 onion
  • 1 zucchini 
  • 2 carrots
  • 4 oz shiitake mushrooms 
  • 1 clove of garlic
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 2 teaspoons Korean Gochujang paste 
  • 2 eggs
  • Vegetable oil

Step 1

Rinse the rice a few times, until the water runs clear. Cook the rice according to the package directions.

Place the meat in  a bowl, then grate the garlic over it.

Step 2

Prepare the meat, by adding the soy sauce, sesame oil, and the sugar. Mix well, cover, and set aside at room temperature.

Step 3

Slice the mushrooms and the onion.

Step 4

Peel and julienne the carrots.

Step 5

Do the same with the zucchini, without peeling it.

Step 6

In a pan or a wok, heat one teaspoon of oil. Then add in the zucchini and cook for 1 minute. Once cooked, pour into a bowl.

Step 7

Heat another teaspoon of oil in the pan, and add the carrots. Cook for 2 minutes and then place them in another bowl.

Step 8

Add the mushrooms to the pan, cook for 2 minutes, and let them rest in another bowl. Do the same with the onion.

Step 9

Add a bit more oil to the pan, and stir in the meat until cooked through. Then add it to another bowl.

Step 10

Put together your bibimbap by splitting the rice into two large bowls. Top the rice with the cooked carrots, zucchini, onions, and mushrooms.

Step 11

Top with the cooked ground beef.

Step 12

Add a dollop of Gochujang paste.

Step 13

Cook your eggs sunny side-up, and then add one to the center of each bowl.
