Easy Cheesy Vegetarian Empanadas for Meatless Monday
Cheesy Sweet Potato Empanadas
Try our step-by-step recipe for these perfect little bundles of creamy sweet potatoes and melted cheese. These empanadas are a delicious combo of sweet and savory and can easily feed a crowd.
Ingredients
For 16 empanadas
- 2 store-bought rolls of pie dough
- 1/2 lb sweet potato
- 1/4 lb baby dutch yellow potatoes
- 3.5 oz hard cheese
- 1 teaspoon curry powder
- Flaky sea salt
- 1 tablespoon olive oil
- 1 egg yolk mixed with 1 tablespoon milk
Step 1
Preheat the oven to 350°F.
Peel and cube the potatoes. Steam them until softened and cooked through.
Step 2
While the potatoes cook, cut the cheese into small cubes.
Step 3
Once the potatoes are fully cooked add them to a large bowl along with the cheese. Mash everything together with a fork.

Add the olive oil.
Step 5
Add the curry powder and a few pinches of the flaky sea salt to the bowl. Mix everything together thoroughly.
Step 6
Cut the rolls of pie dough into 16 circles that are about 3.5 inches in diameter.
Step 7
Add a tablespoon of the cheese and potato mixture to the center of each dough circle.
Step 8
Fold the circles over the cheese and potato mixture.
Step 9
Use your fingers to press down and seal the edges together.
Step 10
Working one by one, pick up the empanadas, and pinch the dough tighter around the edges to seal completely.
Step 11
Place the empanadas onto a non-stick baking sheet, and brush each one with the egg and milk mixture.
