This easy Ritz cracker cookie is a Chocolate Covered Peanut Butter Crunch cookie with a Caramel Drizzle. There is no baking required and you can make as little or as many cookies as you want!
It’s a super simple, no-bake, kid-friendly cookie recipe! And depending on the crackers you use – this could also be a gluten-free recipe.
I have so many yummy Christmas cookie recipes. But sometimes you need an easy recipe to throw together for a quick party or something very simple that the kids can make.
I love this recipe because you may already have all the ingredients in your home! Plus it’s so customizable! It is just a basic recipe to get your creative juices going!
Ritz Cracker Cookies
Makes 10-15 crunch crackers
Ritz crackers (20-30) – they do have so many different types of crackers – but I would stick to plain crackers for this recipe.
1 cup of melting chocolate or chocolate chips – you could use white, dark, or milk chocolate. Or grab some flavored chocolate chips like butterscotch or peanut butter chips to change up the flavors.
1 tablespoon coconut oil
Peanut butter – you can use crunchy or plain peanut butter. It would be good with almond or cashew butter too! Or if you are allergic use a nut-free butter.
Caramel sauce is delicious but you could use chocolate or butterscotch sauce to change up the flavors.
Flaked sea salt – this is optional but it’s so yummy! I love the extra punch of the sea salt with the sweetness of the chocolate and the crunch of the crackers!

Instructions:
Spread peanut butter on 1 cracker then place another cracker on top to make the crunch
Place in freezer to set – about 15 minutes
Melt chocolate with coconut oil, stirring until smooth

Dip each crunch in the chocolate to cover completely
Place on a wax paper-lined plate
