Muffins are undoubtedly massive and commanding, exploding with flavour, and finished with a delightful sparkling sugar squeeze. These decadent chocolate-flavoured muffins are a favourite in any comfort food arsenal. They’re the ideal treat to make for brightening up your loved ones’ day. Hand-mixing the batter takes only 10 minutes, and the muffins are ready in just 20 minutes.

The Procedure to make these muffins:

  1. Preheat the oven to 200C/180C fan/gas mark 1. 6. Line two muffin tins with paper liners. In a large mixing bowl, lightly beat 2 medium eggs with a portable hand-held electric mixer for 1 minute.

 

  1. Whisk together 125ml vegetable oil and 250ml moderately skimmed milk until just coupled, then add 250g golden granulated sugar and gently stir until smooth.

 

  1. Peruse in 400g self-raising flour and 1 teaspoon salt (or 400g plain flour and 3 teaspoon baking powder if using) and stir until just smooth. Be cautious not to over through the batter, as this will result in hard muffins.

 

  1. Mix in 100g cocoa powder or wilted apricots, when using.

 

  1. Fill muffin cups two-thirds full with batter and bake for 20-25 minutes, or until risen, solid to the touch, and a practical tool into the center comes out clean. If the containers would not fit on one shelf, rotate the shelves after 15 minutes of cooking.

 

  1. Allow the muffins to cool in the pan for a few minutes before transferring them to a cooling rack completely.

 

Ingredients:

 

  • 2 medium eggs
  • 125ml vegetable oil
  • 250ml semi-skimmed milk
  • 250g golden caster sugar
  • 400g self-raising flour (or the same quantity of plain flour and 3 tsp baking powder)
  • 1 tsp salt
  • 100g chocolate chips or dried fruit such as sultanas or dried cherries (optional)
