Gooey & Delicious S'Mores Cookies

Last weekend the weather here in Ohio was lovely, and unseasonably warm for early spring. We took full advantage of it and spent some time at out lake cabin, enjoying the fresh air and spring lovelines!
One of my favorite thing about spending time up there is that when we come home in always smell like a campfire. There is something so wonderful about campfires, their warm glow, how people seem to gravitate to them and relax. They are one of my favorite parts of summer, and spending time at the lake.
Of course you can’t spend time around a campfire without getting a hankering for s’mores, am I right? There is something about that summer night atmosphere that just begs for the combination of marshmallow, chocolate and graham cracker.
I don’t know who invented s’mores but they deserve some sort of acknowledgement… and award, or museum, or special holiday maybe?
However, like all awesome things, I believe we should enjoy s’mores whenever, where ever… we shouldn’t just wait for campfires. We should make things like these s’mores cookies, to capture that flavor and enjoy it!!
Let me tell you, if love s’mores these cookies are going to be your new favorite thing. The cookies have an amazing light texture, the homemade marshmallow fluff is gooey and delicious, and of course chocolate makes everything better!
If you’re intimidated by making marshmallow fluff it’s way easier then it sounds, and so so much better than store bought, it’s well worth the effort to make!
s’mores cookies
Here’s what you’ll need to make these s’mores cookies-
For the cookie-
2- Cups Flour
10- Graham Crackers crushed into fine crumbs, I used my food processor
1- tsp Baking Soda
1- tsp Salt
2- Sticks Butter, softened
1/2- Cup Sugar
1/2- Cup Brown Sugar
1- tsp Vanilla Extract
2- Eggs
For the Marshmallow Fluff-
1/4- Cup Water
3/4- Cup Sugar
3/4- Cup Corn Syrup
2- Egg Whites
1/4- tsp Cream of Tartar
2- tsp Vanilla
For the Chocolate drizzle-
1- Cup Semi- Sweet chocolate chips
1/4- tsp Coconut Oil
A pinch of salt
Ok first we’ll get the cookies baked then whip up some delicious topping for them!
Preheat your oven to 350
Then in the bowl of a mixer cream the butter until it’s nice and fluffy. Now add in your sugars, salt and vanilla, continue beating until the sugars are well incorporated. Now add in your eggs and continue beating until they are well incorporated and the mixture is pale yellow and fluffy. Add in your salt, baking soda, and graham cracker crumbs and continue to mix. Gradually add in your flour and mix until everything is nice and blended.
Using a spoon or dough scoop drop dough into 2 tablespoon scoops onto your baking sheet. Press on the top to flatten them just a little, and then pop them into the oven for 11-13 minutes, or very slightly golden brown. Move them to a cooling rack to let cool completely.
While your cookies are cooling you can whip up the marshmallow topping.
In a sauce pan combine your sugar, water and corn syrup. Gradually heat it until boiling. Using a candy thermometer heat it until it’s 240 degrees.
While you’re heating your sugar mixture, put your egg whites and cream of tartar in the bowl of your mixer and whip them until soft peaks form
Once your sugar mixture reaches 240 remove it from the heat, let it cool slightly. Now with your mixer low on gradually pour the sugar mixture into the egg whites. Do it slowly so you don’t end up with something resembling egg drop soup. Once you’ve got the sugar mixture mixed in turn up the speed of your mixer to high and whip it until its nice and thick and creamy with medium/stiff peaks.

Mmmmmm, now resist the temptation to eat it with a spoon!
Once your cookies are cooled and the marshmallow fluff is done go ahead and frost the cookies with a nice thick coating of marshmallow!
Now in a double boiler or just a heat safe bowl over a pan of water, melt your chocolate chips and add in the coconut oil. Melt it until its nice and liquid to drizzle across the cookies.
You can use a spoon to drizzle your chocolate, or even swirl it around with a knife. You can also cut the corner off of a baggie and spoon the chocolate into it and use it to drizzle it across.
After you’ve added your chocolate sprinkle a pinch of salt across the cookies to add just a little saltiness to cut the sweetness!

You can let the chocolate cool before eating or go ahead and dig in… because waiting is really hard!
