  • Artichokes contain compounds that support healthy cholesterol levels. Caffeoylquinic acids found in artichoke leaves and hearts have choleretic effects that both improve flow of bile to and from the liver. They also decrease the creation of cholesterol in the liver so that there is less in the bloodstream. Additionally, the soluble fiber in artichokes aids in lowering serum LDL cholesterol.
  • Artichokes may improve calcium absorption and bone mass. They contain a special fiber called inulin, which has been shown in animal studies and a short-term adolescent study to improve absorption of calcium.
  • Because artichokes are high in dietary fiber, they impart all of the benefits associated with fiber; including gastrointestinal, cardiovascular, and metabolic health. One medium globe artichoke(120 grams) contains approximately 6.5 grams of fiber, while one-half cup of artichoke hearts contain close to 4.5 grams.
