Homemade Mac & Cheese Recipe

Sometimes, you just need good old fashioned comfort food. Whether you’re craving Grandma’s famous pasta with peas or a mountain of mashed potatoes, sometimes you just need to have something warm, inviting, and classic.

Macaroni & cheese is definitely one of my main comfort foods, and when it’s extra cold out or I’m particularly stressed, it’s one of my go-to dinners. I still love the blue box version- it’s a pantry staple at our house- but I really like making my own, too.

Cooking helps me to destress as it takes my mind off of whatever I’m anxious about. It lets me be present in the moment and see a task through, which can be a reward all it’s own when my to-do list is seemingly never-ending. So I take that desire to cook and that craving for Mac & Cheese and make this delicious, rich, super cheesy Homemade Macaroni and Cheese!

Can I use almond milk/soy milk/oat milk/lactose free milk?

I’m lactose intolerant, so my default I use lactose-free milk. It tastes the same and acts the same as “regular” milk in baking and cooking, so it’s a great swap for sure!

If you prefer plant-based milks, those can definitely be used just be sure to get them unflavored/plain. Then just use them in place of the milk that’s called for.

You also might want to start with 1/2 Cup of your milk of choice and then add more until you get to your desired consistency. Plant based milks- especially oat milk- tend to be a bit thicker so you might not want quite as much!

If you’d prefer, you can even use evaporated milk!

What makes Homemade Mac & Cheese a great weeknight meal?

In addition to being a great comfort food, this recipe is an awesome weeknight meal option. It uses only one pot to cook and just a handful of ingredients, so you won’t spend all night doing dishes.

It’s also pretty hands-off- just stand by and let the macaroni cook and then you only need to actively cook for a few minutes before it’s done!

Can the Kids Help?

Kids can ALWAYS help in the kitchen! For this recipe, I’d suggest letting them help with:

  • Whisking the eggs {just be careful if your pot is still hot on the sides!}
  • Stirring in the milk, butter and cheese
  • Pouring the noodles back into the pot
  • Stirring

I’d also suggest that you handle draining the pasta as the pot will be heavy and full of boiling water.

Homemade Macaroni and Cheese

Homemade Macaroni and Cheese

Yield: 4-5 Cook Time: 15 minutes Total Time: 15 minutes

This rich and gooey Mac & Cheese is the perfect comfort food! Ready in just a few minutes, this one-pan meal is great for weeknight dinners too.

Ingredients

  • 8 oz elbow macaroni, cooked according to package directions and drained
  • 2 TBSP butter
  • 3 eggs
  • 1 cup milk
  • 2 & 3/4 Cup shredded cheddar cheese
  • Crushed butter crackers {i.e. Ritz} for topping

Instructions

  1. Cook the pasta according to package directions and drain.
  2. In the same pot that you cooked the noodles, whisk the eggs and stir in the butter, evaporated milk and shredded cheese. Add salt and pepper to taste. Cook on low-medium for a few minutes allowing the cheese to melt and the sauce to thicken while occasionally stirring.
  3. Pour the noodles back into the pot and stir to completely coat the noodles with cheesy goodness.
