Craving baked donuts but no pan? Here’s how to make mini donuts without a donut pan! All you need is a muffin pan, foil, and a little patience. After this tutorial, give it a try using my apple cider donut recipe with powdered sugar.

Even though I tend to use store bought donut pan, I know that not everybody has one. That’s why I created this step by step tutorial so you can make baked donuts without a donut pan.

- Muffin pan: I’m using a standard 12-cup muffin pan. For larger donuts, you can use a jumbo 6-cup muffin tin.
- Foil: Tin foil or aluminum foil both work here.

How to make a donut pan out of a muffin pan
- Start by cutting 5″x5″ squares of foil. Each piece needs to be large enough to cover the bottom of each cup of the muffin pan.
- Fold the foil around a finger or two, gently folding the sides up to create a mold.
- Place into a cup of the muffin pan and press into place.
- Repeat for remaining cups.
It takes about 15 minutes to fill a 12-cup muffin pan.
Pipe batter into the muffin pan
Spray your DIY donut pan with cooking spray, to ensure the donuts won’t stick during baking. Use a generous amount.
Add the donut batter to a gallon-sized ziplock bag and cut off a small piece of the corner. This acts as a piping bag!
Squeeze the batter into the makeshift donut pan, filling each about ¾ full. Bake donuts at 350F for 8-10 minutes.
Once cooked through and golden brown, remove from oven and turn out onto a cooling rack. Dust cooled donuts with powdered sugar and enjoy.
Can you bake donuts on a cookie sheet?
Yes! If you don’t have a donut pan or muffin pan, you can use this same method we used above.
You’ll want to make sure the edges go up higher, to make little boats to place on a baking sheet.

Mini Apple Cider Donuts (without a donut pan)
These mini baked apple cider donuts are absolutely adorable, perfectly moist, and oh so fluffy! No donut pan? No problem! All you need is a muffin pan and foil. Course Breakfast, Dessert Prep Time 20 minutesCook Time 10 minutesTotal Time 30 minutes Servings 12 servings

- Small saucepan
- Large mixing bowl
Ingredients
- 1 ½ cups apple cider
- 1 ½ cups flour
- ½ cup sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon cinnamon
- ½ teaspoon salt
- ¼ teaspoon nutmeg
- 2 tablespoon melted vegan butter
- 2 tablespoon dairy-free milk
- Powdered sugar for coating
Instructions
For the DIY donut pan, cut foil into 12 5-inch x 5-inch square pieces. Working one at a time, place each piece of foil over a finger or two. Then carefully fold the sides up to create a mold. Fit the mold into a cup of the muffin pan and press into place. Repeat for remaining cups.
To make baked donuts, start by reducing the apple cider in a small saucepan on the stove. To do this, bring apple cider to a boil, then reduce to a simmer, stirring occasionally for about 15 minutes. Once reduced to about ½ cup, remove from heat and let cool.
In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, salt, and nutmeg. Pour in reduced apple cider, melted vegan butter, and dairy-free milk. Stir to combine, being careful not to over mix! If the batter seems too dry, add extra dairy-free milk in one tablespoon at a time.
Pipe the batter into a generously sprayed makeshift donut pan, filling about ¾ of the way full. Bake at 350F for about 10 minutes. Flip baked donuts onto a cooling rack and let cool completely!
After the donuts have cooled, top with a dusting of powdered sugar and enjoy. Donuts are best served immediately. Store leftovers in an airtight container at room temperature for 2-3 days or in the refrigerator for up to 5 days.

Ingredient notes
- Flour: All purpose flour works great for baked goods. To make gluten free baked donuts, use gluten free 1 to 1 flour.
- Vegan butter: Refined coconut oil or other oil can be used in place of vegan butter. If not vegan, use regular butter.
- Dairy free milk: Use milk of choice. I suggest unflavored and unsweetened almond milk, soy milk, or oat milk.
