This recipe for immune boosting creamy chicken stew is so amazing! It’s a delicious and hearty soup perfect for cold weather.

The original inspiration for this post comes from Panera. I’ve been tweaking their recipe for a while now, and make a healthier version with homemade bone broth, lots of garlic, and organic probiotic-rich kefir. These changes make this soup a great way to boost the immune system and make this soup one of my family’s favorite!

Immune boosting ingredients –

Did you know you can naturally boost your immune system by eating the right foods? It’s true! Here are the immune boosting foods found in this chicken stew:

  • Nancy’s Organic Kefir  – has 64 BILLION live probiotic cultures (as part of 233 billion total live cultures) in every 8 fl oz serving. Made with organic milk from pasture-raised cows on small farms in Oregon, this kefir is also unsweetened and GMO-free. It’s what makes this stew creamy and delicious.
  • Garlic –  is antibacterial, antiviral and anti-fungal and should be eaten every day. Of course, fresh garlic is best and I’ve got lots of fresh garlic in this soup.
  • Chicken bone broth – did you mom feed you chicken noodle soup when you were sick? There’s a reason for that! The stock is great for boosting your immune system, especially if you make home-made bone broth. Bone broth is really easy to make and it freezes well too. I freeze mine in 4 cup quantities to make it even easier to cook with.

Like most recipes I make, this stew is pretty easy, especially if you do a bit of prep work (cook bone broth and chicken) ahead of time. Gather ingredients, do a little chopping, and start cooking. You’ve got a yummy stew in about 20 minutes. In addition to using organic Nancy’s kefir, I also recommend using organic chicken and veggies as well. Celery is #5 on Dirty Dozen list, so if you have to prioritize, choose organic celery. The last thing you want in your immune boosting foods is an unhealthy dose of pesticides.

Immune Boosting Creamy Chicken Stew

A delicious creamy chicken loaded with immune boosting properties, this creamy chicken stew comes together very quickly with the help of leftover chicken.

Ingredients

  • 1 TBS extra virgin olive oil
  • 3 cloves crushed garlic
  • 1/2 cup chopped onion, about 1 medium onion
  • 1 1/2 cups chopped carrots, about 3 medium
  • 1/2 cup chopped celery, about 2 large ribs
  • 4 cups chicken broth, preferably homemade bone broth
  • 1 tsp dried thyme
  • 2 cups chopped, cooked chicken
  • 1 cup cubed, peeled potatoes
  • 4 TBS unsalted butter
  • 1/4 cup all-purpose flour
  • 2 egg yolks
  • 1/2 cup Nancy’s Lowfat Organic Kefir
  • 2/3 cup fresh or frozen peas
  • 1 tsp REAL Salt
  • 1/2 tsp finely ground black pepper
  • Fresh parsley for garnish

Instructions

  1. Warm oil in large pot over medium heat and add onions, carrots, and celery.
  2. Cook until the vegetables are tender, about six minutes.
  3. Add broth, thyme, and potatoes, cover and bring to a gentle simmer over high heat. Simmer until the potatoes are cooked, about 15 minutes, and then add the cooked chicken, peas, salt and pepper.
  4. Stir flour and butter together in a small saucepan and stir together to form a smooth paste.
  5. Gradually stir the paste into the stew and simmer over low heat until the stew thickens, 3-4 minutes.
  6. Mix together the egg yolks and the kefir. Add 1/4 cup hot stew to the mix and then whisk the egg mixture back into the stew. Cook on low for one more minute.
  7. Garnish with parsley and enjoy!
