As you step into Boxing Day there’s only one thing on everyone’s mind, eating Christmas Day leftovers! Whether it’s making bubble & squeak or just piling everything between two slices of white doughy bread, we think it’s fair to say they’re arguably better than the main event.
This recipe takes the much loved loaded fries and upgrades them with some good old British and festive spirit by using up those all important Christmas leftovers.
God-like roast potato get topped with roast meats, pigs in blankets, stuffing and all those vibrant veggies. Finished with cheese and lashing of gravy, it’s roasted until steaming golden and melting.
All that’s missing is a blockbuster classic and to wear your pjs all day! We promise this will become a new Boxing Day tradition.

Ingredients
- 800 g
roast potatoes, cooked
- 80 g
stuffing, cooked
- 10
pigs in blankets, cooked
- 250 g
roast dinner meat
- 250 g
carrots, cooked
- 200 g
sprouts
- 6 g
braised red cabbage
- 200 mL
gravy
- 150 g
cheese, grated
Directions
- Preheat the oven to 200ºC (180ºC Fan). Line a large baking tray with greaseproof paper and add the roast potatoes. Tightly pack them together and use the pack of a fork to squash them down slightly.
- Next, scatter over the stuffing, pigs in blankets, roast meat, carrots, sprouts and braised red cabbage. Finish with 200ml of gravy and sprinkle the cheese over the top. roast for 25 minutes, or until golden on the top and hot and steamy in the middle.
- Serve & enjoy!
