Mini apple flower tartlets
Cooking is supposed to be fun, not serious. We love anything that’s rolled, especially when working with pastry crust. With this playful recipe, we roll pastry crust with apple slices to create adorable flower shapes and delish mini tartlets. These are totally worth the effort. It’s your turn to play with our easy step-by-step recipe.
Ingredients
For 9 mini tartlets
- 1 prepared pastry crust, rolled out
- 2 apples
- 1 oz almond meal
- 3/4 oz brown sugar
- 1/2 teaspoon powdered cinnamon
- 1 egg yolk blended with 1 tablespoon milk
- Brown sugar for garnish
Preparing the apples
Remove the cores and seeds with an apple corer. Then slice the apples very thinly — a mandolin works best for this.

Cut your ‘petals’
Stack the slices on top of one another and cut them in half.
Keep the skin on
Don’t peel the apples — the skin adds a pretty pop of color!
Prepare the crust
Mix together the brown sugar, almond meal and cinnamon. Pour the mixture into the center of the pastry crust and spread it evenly across by hand.
Prepare the flowers
Cut across the top of the pastry crust to create a straight edge. Arrange the apple slices in a row, overlapping as you go. Make sure the rounded end of the slices is at the top, extending slightly past the edge of the crust, which will create the ‘flower’ effect. Leave a little room on one side.

Cut off a strip of the pastry crust along the straight edge of the apples.
Begin rolling
Start rolling your strip of apple-pastry crust.
Keep rolling
Keep going until it’s rolled all the way up.
Your first rolled tartlet is ready!
Wet the seal of the pastry crust along the edge of the tartlet so that it holds its shape while baking.
Repeat with another row
Lay out another row of apple slices, and remember to keep them overlapped, with the rounded end toward the outside of the pastry crust. Cut the strip across where the apple ends (the straight edged side). Roll up the strip as previously done. Repeat with remaining apples and pastry crust.
Prepare to bake
Preheat your oven to 350° F. Place the finished flowers on a baking sheet, as you go along.
Baste
Baste your flowers with the egg yolk/milk mixture.
Sprinkle with brown sugar
Dust your flowers with brown sugar, to give them a tasty crunch factor.
Baking time
Bake the tartlets in the oven for approximately 18 minutes. They should be golden and crunchy when finished. Serve slightly warm or cold. These elegant mini apple flower tartlets will keep for one day in an airtight container.
