Pressure Cooker Pasta Primavera comes together easily in an electric pressure cooker, yielding a delicious and colorful dish. This light dish works equally well as a meatless meal or as a side for different mains. Using a pressure cooker doesn’t heat up the kitchen like using a stove. This easy recipe means less time spent in the kitchen, leaving you more time for family and fun. Here’s how I make Pressure Cooker Pasta Primavera.

Ingredients
- 1 lb small to medium sized pasta (I used ziti)
- 5 cups vegetable broth
- 2x cups asparagus (chopped after removing the woody ends)
- 2x cup baby carrots, cut into thirds
- 1x zucchini squash (deseeded and cut into bite sized pieces)
- 1x yellow squash (deseeded and cut into bite sized pieces)
- 1x red bell pepper (deseeded and cut into bite sized pieces)
- 1x small white onion, chopped
- 2 tbsp minced garlic
- 2 tsp & 2 tbsp Italian seasoning
- 1 cup shredded parmesan cheese
- olive oil
- black pepper to taste
Instructions
Plug in the electric pressure cooker.
Select the saute setting and place a layer of olive oil into the bottom of the pot.
Place the chopped vegetables into the pot.
Sprinkle 2 tsp of the Italian seasoning over the vegetables, stirring gently to combine.
Saute the vegetables until they are tender, which takes 5-10 minutes.
Remove the vegetables and place them aside in a bowl with a lid.
Put the pasta into the pot.
Pour the vegetable broth over it, covering as much of the pasta as is possible.
Place the lid onto the pot and close to seal.
Set the pressure cooker to cook on manual high pressure for 4 minutes.
Once the cooking time has finished, do a quick pressure release and open the pot.
Add 2 tbsp of Italian seasoning to the pot and stir to combine.
Add the shredded parmesan cheese.
Stir well until the cheese has melted.
Add the cooked vegetables back into the pot.
Stir well.
Serve immediately with black pepper to taste.
