Pumpkin Oatmeal Cookies Recipe From Val’s Kitchen

Ingredients

  • 1 cup flour
  • 1 tsp pumpkin pie spice
  • 1/2 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp kosher salt
  • 1/2 cup unsalted sweet cream butter, softened
  • ½ cup light brown sugar
  • ¼ cup sugar
  • 1 large egg yolk
  • 1 tsp pure vanilla extract
  • ⅓ cup pumpkin puree
  • 1 ½ cup old fashioned rolled oats

Instructions

Preheat the oven to 350 degrees f.

Line two cookie sheets with parchment paper.

Place the the flour, pumpkin pie spice, cinnamon, baking soda and salt into a large bowl and whisk together.

Place the butter, brown sugar and sugar into a second large bowl and beat together until combined, smooth and fluffy.

Beat in the egg yolk and the vanilla until combined.

Beat in the pumpkin puree until combined.

Gradually beat in the dry ingredients into the wet ingredients until combined.

Fold in the old fashioned rolled oats.

Use a medium ice cream scoop to scoop out some dough onto the cookie sheets.

Gently flatten the dough into thick disks.

Bake in the oven for 9-12 minutes or until the edges are a golden brown and the tops are set.

Allow to cool completely before serving.

Serve and enjoy!
