Recipe: Chicken Caesar Pasta Salad
I have been on a quest, to eat more healthy foods, for a completely vain reason. I want to feel comfortable in shorts when my family visits Disney. Whatever motivates you right?
I decided that when I prepared dinner tonight that I wasn’t going to offer my children an alternative. I set it down in front of them without a word. We said our nightly prayer and to my great surprise, they started EATING the food! My kids are creatures of habit and beyond that, if it looks different they are likely going to complain. I was prepared for a fight. It didn’t happen.
Due to the fact that it was a hit with my family and it was super yummy. I thought that I would share the recipe with you.

Super Yummy Chicken Caesar Pasta Salad Recipe!
Chicken Caesar Pasta Salad:
2 Chicken Breasts
Hearts of Romaine (I used a bag that had 3 bunches of romaine)
Grape Tomatoes
Parmesan Cheese (to taste)
Croutons
Caesar Salad Dressing ( I chose light dressing)
Bowtie Pasta
Assembly:
While the chicken is on the grill and the bowtie pasta is cooking, chop 2 of the 3 bunches of romaine, cut the grape tomatoes in half, put the desired amount of parmesan cheese in the bowl and mix it up.
Once the chicken is cooked, chopped and cooled and the bowtie pasta is drained and cooled. Combine with the lettuce mixture. Then add in your caesar dressing (I used about 1/2 of the bottle as I didn’t want the salad drowning in dressing) top with croutons and serve!
