In total, you’ll only need a skillet, medium mixing bowl and a Glass 9×13-inch baking dish. It’s a rather simple casserole dish that can be made the night before and then just baked the morning of your brunch. There are so many great recipes that call for a 9×13-inch baking dish and I recommend everyone owns one. I use mine all the time!

This casserole is so hearty with the potatoes and sausage. It’s honestly great by itself, but what’s brunch without all the extras? You’ve got to live it up when you’re making brunch. Serve the Tater Tot casserole with something sweet to compliment the dish. If you want even more meat, serve some sliced ham or bacon since you already have sausage.

How To Make Sausage Tater Tot Casserole Ahead of Time
If you’re serving this casserole for a special occasion and want to save time, you can prep it the night before. Follow the directions, until you add the tater tots. Keep the tater tots off the casserole and cover it with plastic wrap. Place the casserole in the refrigerator overnight. Pull it out, in the morning, and top with the tater tots. Follow the baking directions as normal and enjoy!
How To Keep Your Sausage Tater Tot Casserole Fresh
After you’ve enjoyed the casserole, if there are any leftovers, you’ll want to place it in the refrigerator. I like to cover the baking dish I used and keep it in that container. If you buy a baking dish that comes with a lid, you can cover it and stack it in the refrigerator. Eat off of the casserole for 5-7 days. Reheat individual portions in the microwave, on high, for 1-2 minutes until warm.
Can You Freeze Tater Tot Casserole?
Yes! You can certainly freeze Tater Tot Casserole and it’s a great idea. After it’s baked, you can freeze it. Go ahead and double the recipe, to make two of them, and freeze one. It will last up to six months in the freezer. Then you can thaw it in the refrigerator for 24 hours before heating again. I love to freeze one to give to neighbors in need or when I was pregnant in my third trimester.

Recipe Substitutions You Can Make
You can use any type of ground sausage that you want. There are different varieties and some are more spicy, so that’s just preference. If you don’t have any half-and-half, you can use heavy whipping cream. That will make the casserole more rich and add more fat content. It’ll still taste great.
Additionally, if you don’t have Tater Tots, you can use frozen hash browns. That will work, but then I’m not really sure if you can call it a Tater Tot Casserole! That’s just if you’re in a pinch.

- Ground Sausage
- Eggs
- Half and Half
- Garlic Powder
- Salt
- Black Pepper
- Cheddar Cheese
- Tater Tots
Step-By-Step Directions To Make Sausage Tater Tot Brunch Casserole
Preheat the oven to 350 ℉. In a medium skillet, cook ground sausage over medium heat while breaking into small pieces until no longer pink.
Remove skillet from heat, drain grease from sausage and set aside. Grease a 9′ x 13′ baking dish with cooking oil spray.
Spread the crumbled sausage in an even layer over the bottom of the baking dish. In a medium bowl whisk eggs, half and half, garlic powder, salt and pepper until well combined.
Pour the egg mixture over the sausage in the baking dish. Top with shredded cheese.
Place frozen tater tots evenly over the top of sausage, egg and cheese mixture. Do not submerge tater tots.
Bake for approx. 50 minutes or until a knife inserted in the middle comes out clean. Remove the casserole from the oven and let it sit for 5 minutes before serving.
Yield: 8 Servings

Prep Time 10 minutes Cook Time 55 minutes Total Time 1 hour 5 minutes
Ingredients
- 1 lb Ground Sausage
- 8 Large Eggs
- 3/4 Cup Half and Half
- 1 tsp Garlic Powder
- 1/2 tsp Salt
- 1 tsp Black Pepper
- 1 cup Cheddar Cheese, shredded
- 1 lb Frozen Tater Tots
Instructions
