Savory Smoked Salmon Lasagna

This tasty, refined take on classic lasagna switches out the traditional meat sauce for a rich smoked salmon and citrus-tinged bechamel sauce. It’s wonderfully savory, comforting and perfect for entertaining.

Ingredients for 4 servings


  • 3 cups (70 cl) milk
  • 2 oz. (50 g) slightly salted butter, cut into cubes
  • 1/4 cup + 1 tbsp (50 g) flour
  • 2 pinches of fine sea salt
  • 2 pinches of freshly cracked black pepper
  • 2 pinches of ground nutmeg
  • ½ organic lemon, zested
  • 1 small onion, peeled and minced
  • 1 tbsp olive oil
  • 5 oz. (150 g) smoked salmon, chopped into small pieces


  • 1/2 lb (250 g) no-boil lasagna noodles 
  • 10 1/2 oz. (300 g) smoked salmon
  • 1/4 cup (40 g) grated parmesan
  • 1 1/4 cup (300 g) fresh mozzarella, cut into cubes
  • Freshly cracked black pepper
  • Fresh dill (optional)

Step 1

Make the bechamel sauce.

Heat the milk and set aside.

Melt the butter in a small saucepan over low heat, add the flour and whisk to combine. Gradually pour in the warmed milk, whisking constantly.

Season with the salt, pepper and nutmeg, and continue whisking for 10 min., until the bechamel easily coats the back of a spoon. It shouldn’t be overly thick. Remove from heat and add the lemon zest. Stir to combine.

Cover the pan with a lid and set aside.

Step 2

Heat a pan over medium-low heat with the olive oil. Add the onion and sauté for 2 min. Add the smoked salmon (5 oz.) and cook for 1 min. until it turns a pale rose color.Remove from heat and add this mixture to the bechamel. Stir well to combine, then put the lid back on and set aside.Place the mozzarella cubes in a fine-mesh sieve over a bowl and let drain.

Step 3

Preheat the oven to 350°F (180 °C).

Spread 2 to 3 tbsp of the bechamel sauce across the surface of a 10.5-inch x 7.5-inch (40 cm by 20 cm) rectangular baking dish.

Step 4

Add one layer of lasagna noodles, then spread with bechamel sauce until covered.

Add a layer of smoked salmon slices and sprinkle with grated parmesan.

Step 5

Add another layer of lasagna noodles.

Spread with more bechamel sauce and top with 2/3 of the drained mozzarella cubes.

Step 6

Add another layer of lasagna noodles, top with bechamel sauce and another layer of smoked salmon slices. Sprinkle with more grated parmesan.

Step 7

Finish with a final layer of lasagna noodles and top with the remaining bechamel sauce.

Sprinkle with parmesan and add the rest of the smoked salmon cut into small strips. Top with the remaining mozzarella.
Bake for 40 to 50 min. until the lasagna is cooked through and golden on top.

Let the lasagna cool between 15-30 min. before serving. Season with more freshly cracked black pepper, lemon zest and fresh dill, if desired.
