Caramelized Onion & Bacon Bites Ingredients

To make these mini appetizers, you will need the following ingredients. The amount of appetizers you can make varies, but we were able to make 25 with these ingredients.

  • Vidalia onions (2 large)
  • bacon (we used Homestyle)
  • ricotta cheese
  • ciabatta bread stick(s)
  • slivered almonds
  • balsamic vinegar
  • granulated sugar
  • butter
  • salt

How to Make these Bacon Appetizers

How to Bake Bacon

Cook bacon until perfectly crisp. I prefer to bake mine in the oven for the easiest clean up.

Line a large baking sheet with foil and add the bacon slices to a wire baking rack which keeps them out of the grease.

Make sure slices are not stacked on one another. Bake for 15-25 minutes or until slices are crisp and retain their shape when held up. You do not want to overcook your bacon so be sure to check on it at the 15-minute mark. Check on it in one-minute increments.

Once cooked, carefully remove the pan from the oven. After bacon has cooled, chop it up into smaller bite-sized pieces. Allow the grease on the foil to also cool fully before throwing the foil out. You can also save the bacon fat in a food-safe tin for future cooking.

How to Caramelize Onions

You will need a large skillet since you will be cooking two, large Vidalia onions. To start, cut off ends of onions and peel. Slice onions into 1/4″ rings.

Add butter, to skillet and heat. Place onion rings into the heated skillet. Sprinkle sugar, and balsamic vinegar, over the onions and cook over medium-low heat. Stir often to mix up onions and prevent any burning or sticking.

Once onions begin to take on a golden color, sprinkle with salt, and stir. Cook for an additional 5 minutes. You do not need these to be too amber colored for this appetizer.

Preparing Crostini

For this crostini appetizer, I didn’t coat the bread with any butter or oil. You really just want to crisp the bread up before topping.

  1. Slice your ciabatta bread stick(s) into 1/4″ thick slices.
  2. Line slices on a parchment-lined baking sheet.
  3. Bake at 350 degrees F. for 6-8 minutes or until slightly golden brown.
  4. Once toasted, remove from oven and cool for 3-4 minutes.

Assembling

  1. Add 1 tablespoon of ricotta cheese to each toast.
  2. Line with 4-5 slivered almonds each.
  3. Top with one hefty tablespoon of caramelized onions.
  4. Sprinkle each with 1/2 tablespoon of chopped bacon.
  5. Serve!

These appetizers taste perfect at room temperature and do not need to be warm. I love how the savory, salty bacon pairs so well with the sweet onions. The slivered almonds add a nice crunch and the ricotta balances it all out.
