Expert opinion from Jen Hsu

The simplest substitution for tamarind paste is to combine lime juice and brown sugar to give the same flavour and texture however it will lack a majority of the nutrient profile from tamarind. You can also use Worcestershire sauce instead since tamarind is actually an ingredient of Worcestershire sauce. The healthiest substitute would be adding dried fruit to lime juice and water and meshing them up after the dried fruit has been softened. Not only will the texture mimic tamarind paste, there will be plenty of vitamins and minerals from the dried fruits as well.
