This white chicken chili recipe made in the Instant Pot is perfect for fall but we eat it year-round! A white chicken chili beans recipe that the whole family will love. It’s not too spicy, very flavorful, and thanks to the Instant Pot it’s on the table in less than 30 minutes.

Do I have to make this chicken chili in the Instant Pot?
You can try and adjust the recipe to suit your needs for stovetop or crockpot cooking but I’ve made this particular recipe specifically for the Instant Pot. Chili can take a long time to cook. White chicken chili beans style can take a long time in the crockpot or on the stove.
I like that this recipe is start to finish complete within 25 minutes. There’s no muss, no fuss, and it comes out perfectly every time.
I know some people are leery about electric pressure cookers but when it comes to this recipe there’s really nothing that can be messed up so give it a shot and see how easy it is to make a quick dinner with nutritious ingredients at home!

Here is what you will need to make my version of white chicken chili! It’s super easy and contains ingredients that are easy to bump up or down depending on your flavor preferences.
- 1 whole rotisserie chicken
- 1/2 onion, diced
- 2 jalapeños, seeds removed and diced.
- 30 oz cans navy beans, rinsed and drained
- 30 oz canned corn, drained
- 4 oz diced green chiles, drained
- 3 cups low chicken broth
- 1 white chicken chili packet

Do I have to use rotisserie chicken for this chili recipe?
Yes, you do need to use rotisserie chicken for this recipe. You don’t have to use a store-bought one, you can make your own with the Instant Pot or your Air Fryer. Here’s a great collection of rotisserie chicken recipes that you can make at home.
If you are wondering if you can use raw chicken in this recipe the answer is no. That will change your cooking time and it will also change the flavor. You can use leftover chicken that is already cooked if you have that on hand! We make shredded chicken with the crockpot sometimes and that works well in this recipe too.
How to make white chicken chili:
This is a really simple recipe. If you are new to the Instant Pot world this is a great place to start. It’s foolproof and you won’t have to worry about the recipe getting messed up!

- Turn your Instant Pot to saute.
- Place the chicken, onions and jalapeños into the pressure cooker.
- Cook until the onion turns translucent.
- Pour in the beans, corn, green chiles, and the broth.
- Then stir in the seasonings.
- Cover with the lid and set valve to sealing position.
- Cook on manual setting for 15 minutes followed by a quick pressure release.
- Stir and serve.
- Can garnish with jalapeños and cheese.
